Pumpkin Whole Wheat Waffles

Good Sunday morning! I have a treat for you today, something that would be perfect to make for someone you love. Or for yourself, either way. Just make these soon.

I am a breakfast person, I would have no complaints about eating breakfast for every meal. I have been dreaming about making these for weeks, and they lived up to the hype! They are perfect with a little of the maple syrup Mom and Dad brought back from vacation.

Pumpkin Whole Wheat Waffles

Servings: 6 waffles   Serving Size: 1 waffle   Points+ per serving: 7

Ingredients:

  • 1 3/4 c. white whole wheat flour
  • 2 T. sugar
  • 1 T. baking powder
  • 1/2 c. egg substitute
  • 1 1/2 c. non fat milk
  • 1/4 c. oil
  • 1/4 c. unsweetened applesauce
  • 1/2 c. canned pumpkin
  • 1 t. vanilla extract
  • 1 T. pumpkin pie spice

Directions:

Combine all ingredients in a large bowl. Pour 1/2 c. batter into a heated waffle iron and cook until done.

Notes:

  • Regular whole wheat flour works fine, I just really like the texture of the white whole wheat, it has less chew and crunch to it. You could also just use all purpose flour, no judgment here.
  • For a very fall-y flavor, substitute maple extract for the vanilla, and up it to 2 teaspoons. Upping the pumpkin pie spice also wouldn’t be a bad idea here.
