Morning, friends. I hope your weekend has been a great one so far. Mine has been quite exhausting, which means I have just enough energy to bring you this yummy recipe.
These babies are delish. Make them for someone you love, or yourself. It really doesn’t matter, just make them. Then bring some to me.
Spiced Blueberry Muffins
Makes: 12 muffins Points+: 3 per muffin
- 1 3/4 c. flour
- 1/4 c. splenda
- 1/4 c. brown sugar
- 2 t. baking powder
- 1/4 t. salt
- 1/2 t. cinnamon
- 1 egg
- 3/4 c. nonfat milk
- 1/4 c. applesauce
- 1 t. vanilla
- 3/4 c. blueberries (fresh or frozen)
Combine flour, sugars, powder, salt and cinnamon in a large bowl. In a separate bowl mix together egg, milk, applesauce and vanilla. Combine with flour mixture, fold in blueberries. Fill prepared muffin tin 1/2 full with batter. Bake at 350 degrees F for 18-20 minutes or until tops are light golden brown.
I love when the blueberries explode, so good.
